Tuna Burger & Zucchini Salad

Ah, it was a great dinner...sorry, did not take a pic...

Menu: Tuna Burger, Zucchini and Apple Salad and sweet potato fries...yeah, sounds good, huh?

Okay, I rarely eat beef burgers anymore, hell, I rarely eat beef. So, when I want a burger, it is usually a tuna burger, well, since summer of 2008 when I caught an episode of Emeril on Planet Green.


I think I posted this recipe before...but I don't know that I mentioned it was a favorite that has replaced my desire for a beef burger.

I seem to always have sweet potato fries with it, replacing white potatoes that are not as good for you and turn to sugar in the blood stream.

We did however try something new today. I picked up zucchini's with every intention of cooking them as I usually do with onions, tomatoes, and bacon bits. This morning when I was thinking about the dinner meal for the day I just did not want to cook the zucchini and figured there must be a way to fix it into a salad. I did searches and found many options. I decided on a Zucchini and Apple salad. And OMG, it was a great decision. Here is the recipe and the link:

ZUCCHINI AND APPLE SALAD

1/2 c. salad oil
1 tbsp. lemon juice
2 tbsp. white wine vinegar
1 tsp. each sugar and dry basil
About 3/4 tsp. salt
1/4 tsp. pepper
3 med.-size red or golden Delicious apples
1/2 med. size red onion, thinly sliced lengthwise
1 green pepper, seeded and cut into matchstick pieces
1 lb. zucchini, thinly sliced

In a salad bowl, combine oil, lemon juice, vinegar, sugar, basil, salt and pepper. Core and dice unpeeled apples and add to dressing; coat apples well with dressing. Add onion, green pepper and zucchini. Stir lightly. Cover and chill.

Just before serving, mix salad again until well combined. Makes 8 servings.

    I like raw zucchini--I like cooked zucchini.....I like squish, period.
    Well, cept for that acorn squish stuff. *shudder*
    I don't like that so much.....

  3. Yummy! I wish I could get fresh tuna around here. I'm lucky to be able to even find frozen. I wonder if you can use the pouch tuna for this? The zuchinni sounds good too. I like it any way that is cooked.
