Simply Delicious Sunday
I actually made this salad for Valentines Day, but hubby loved it so much he wanted it again today...and I had everything still so I made it again...just bigger. I wish I would have taken a picture because it looked so pretty. I guess I'll call it Spinach Tortellini Salad.
Ingredients, but no measurements...do what looks right for whomever you are serving...
Spinach - baby leaves
Tortellini (Chicken, Prosciutto, and Parmesan)
Marinated Mozzarella
Shaved Parmesan
Green onion
Mrs Dash (Sun Dried Tomato, Basil, and Garlic) (forgot this when first posted)
Olive Oil
Balsamic Vinegar
I filled the bowl for each person with spinach. I cooked the tortellini and rinsed with cold water and let them sit while I put the salads together. I cut up the marinated mozzarella into chunks and sprinkled over the spinach, about 2 oz. I chopped the green onion real thin, about 1 tsp. I then placed about 6 or so tortellini in each bowl. I sprinkled some shaved Parmesan and the green onion over the salad. I sprinkled with a little Mrs Dash and drizzled the Olive Oil and Balsamic Vinegar over the salad.
It was delicious. Hubby just loved it...a new fav I do believe. You can use different tortellini and mozzarella to change up the flavors.

Ohh that salad sounds so good it's making my mouth water. I've never heard of marinated mozzerella. Did you marinate it yourself?

ReplyDeleteNo, I did not marinate the mozzarella myself. I got it at Kroger where they have all of the different types of cheeses. It is the soft mozzarella that looks braided, yet this was marinated.
